I look forward too the yachting industry as my new career. I work for the hotel industry for about 15 years and I thing that is time for a change.

How much input do you feel an owner or guest should have in menu planning? 

It is very important.This is not the restaurant or the hotel industry to have like a setup menu for longer time.

How do you organize yourself so that you have all the provisions you need, for any meal, at any given time? 

planing,inventory,shopping list

What do you feel is the most important quality for a successful Chef or Cook to have? 

organized and a good imagination regarding food.

How do you handle constructive criticism towards your food? 

every day is a learning day so you have to be open to accept everybody's opinion.

How do you feel about preparing special meals for crew with certain dietary restrictions? 

It is very important for my that the crew is happy and healthy.

How often is it okay to prepare the same meal for guests? 

I been in this situation with my last family that I work for.
